Fruit in passion syrup

Ingredients:

  1. Pulp from four passions
  2. ˝ cup sugar or honey
  3. ˝ cup water
  4. 2-3 tbs shredded ginger
  5. 1 tbs golden syrup
  6. 1 tbsn finely chopped mint
  7. ˝ large water melon with seeds removed
  8. 1 pawpaw peeled and cubed

Method

  1. To make syrup: Combine passion fruit sugar water and ginger and golden syrup in a pan. Stir over low heat without boiling. Until sugar has dissolved. Now bring to boil. Reduce and simmer for 10 – 15 minutes or until slightly thickened.
  2. Add mint , remove from heat and allow to cool completely.
  3. Arrange fruit in glasses or serving dishes.
  4. Pour syrup over.
  5. It can be served with whip cream or ice cream.
